This is the same grade of stainless steel used on highways and in coastal areas.
Nyloc nuts give extra grip in areas prone to high-vibration (thanks to their nylon insert) while standard nuts rely just on thread friction. Nylocs are usually single-use and not suited to extreme heat or harsh chemicals (saline environments are fine).
